How to pickle green olives - Palestinian Recipe

This month, many Palestinians go to their lands/farms to pick olives. It is the time where both immediate and distant family members come together to harvest their lands. Most of the olives picked will be turned into oil, and some will be pickled and eaten as a side dish throughout the year.  In honor of those who are sweating in their land and those denied access to it, we share a simple recipe of how to pickle your own olives.

1.  Place your olives in a bowl

2. Soak them in water for 24 hours

3. Crush the olives using a glass

4. Place them in a bowl

5. Leave them to soak for 24 hours 

6. Repeat process #5 for 3 days

7.  Remove water and add half a cup of olive oil to the olives

8. Peel garlic clove and add to the olives

9.  Cut 6 lemons in small pieces and juice 3 lemons and add to the olives

10. Mix all ingredients together in bowl

11. Add 8 spoons of salt into 1 liter of water; mix until salt is dissolved

12. Empty and clean plastic bottles

13. Insert the olive mix into the bottle

14. Once bottle is full, add the salted water into the bottle

15. Seal the bottle and place in your kitchen

16. Wait 3 weeks. You can see that the color of the olives has changed into a pale green.
